Good Morning. I hope that everyone is keeping warm during these cold winter days. And what better way to keep warm than with a delicious casserole for dinner.
I will make notes at the end of the recipe of the adjustments I made when making this recipe - twice now.
Chicken Cranberry Pinwheel Bake
For the Pinwheels:
2 cups
packaged biscuit mix (1)
½ cup milk
For the casserole:
½ cup
cranberry orange relish
¼ cup chopped white sweet onion
¼ cup butter or margarine
1/3 cup all purpose flour
14oz of chicken or vegetable broth
1 1/3 cups milk
1 ½ cup
cooked chicken (or turkey) cut into bite size pieces (3)
1 cup
shredded cheese
1 can of mushrooms pieces, drained
Pinwheels: combine biscuit mix with ½ cup milk; stir well, turn onto lightly floured surface, knead 5-6 times. Roll out to a 10 inch square, spread with cranberry relish over dough, roll up as a jelly roll, moisten edges with water, seal, cut into 8 slices, set aside.
In saucepan cook onion in butter/margrine until tender, stir in flour, blending well, add broth & 1 1/3 cups milk. Cook & stir for 1-2 minutes, as it starts to thicken, add chicken/turkey, cheese & mushrooms, stir until cheese melts & mixture is on a low slow boil. Turn chicken mixture into 12X7X2” baking dish, arrange pinwheels on top, bake at 425 until biscuits are browned. Serves 4-6.
My Adjustments:
(1) I used Pilsbury crescent rolls so I don't need the 1/2 cup milk
(2) I mixed whole berry cranberry sauce with orange marmalade jam to make cranberry relish
(3) I use soy/tofu cut into slices (for me)
(4) I used light fat Farmer's Marble

Currently Rejoicing: As of Tuesday, our region moves from total lock down / stay at home, to Red Control Zone, which means a few things can open up with restrictions & one of those things that can open is hair salons. The lady that cuts our hair emailed me on Saturday to "offer" us a spot this week, which we eagerly took. Her business is in her home so I feel very safe going there. "T" has always been very diligent about cleaning even before COVID times. BUT, the weather forecast is for lots & lots of snow this week, (possibility of 30cm by Tuesday evening) so we might end up cancelling our appointments.
Currently Reading: Green Lights by Matthew McConaughey. I picked this book because I saw Matthew interviewed twice for this book & he was quite interesting & he spoke so well. So you cannot image my disappointment in reading this book. I am not keen on his writing style, I find disjointed & chopey & I certainly am having great difficulty caring about his family, specifically his parents. As Matthew writes it, they sound quite physically abusive.

President Obama's latest, A Promised Land, it reads very much like the man himself speaks; kind, deliberate & a tad on the slow side. I am enjoying, although I read in short 20-30 minute sessions. It's a big book so I think it will take me the full 3 weeks that I have the book on loan for.

Currently Crafting: I continue with motivation of the 100 Day Project, although I am not at the craft table every day. I am wading through a back log of Christmas layouts & some misc. layouts along with last summer's pool time photos.
I also caught up with my garden album layouts for January.
And I leave you with this thought of mine ... because of lock downs, pandemic restrictions, I feel like I am living a verb-less life.

There's not a lot happening here in my little piece of the world, so I'll leave you with some photos of what winter is looking like right now in that little piece of my world.
Oh, & just for the record, I did see my shadow on February 2nd, so I am predicting 6+ more weeks of winter. Our provincial rodent forecaster, Wiarton Willie, did not see his shadow, which means he is predicting an early spring. We'll see who's correct come March 16th!
Now to scenes of winter in my world.
Today I'm pausing on sharing wisdom to pay tribute to a true hero, Captain Sir Thomas Moore, known to the world as Captain Tom.
Captain Tom passed away yesterday. He had contracted COVID.
This is the gentlemen, who turned 100 years of age in April of 2020, walking at his retirement home, in the garden to help raise money for the British National Health Services.
He captured the world's heart as a hero & inspiration of the pandemic & the first lockdowns. For months there were nightly news reports & photos of Captain Tom walking, aided by his walker. We watched his birthday celebrations, surrounded by thousands of cards sent from around the world. We watched as Queen Elizabeth II, knighted him at Windsor in July.
By the time his walking campaign closed he had raised about 39 million pounds or in Canadian dollars $68,194,459.00.
And while Captain Tom was British & was raising money for a British institute, I know he inspired many in this country, in this region. Seniors all over were taking up the challenge to walk for charity. He shone a light on what's possible at any age.
I was one of those sending a birthday card to Captain Tom back in April. I was one of those shedding a tear yesterday.
